We recommend using a reliable, trackable courier for returns to ensure safe receipt.
Damages in Transit: Inspect your package upon delivery. If it arrives damaged, refuse it or email sales@thepickleproject.com within 48 hours with photos, so we can arrange a replacement or refund.
Lost Shipments: If tracking shows non-delivery beyond 15 days, notify us and we’ll coordinate with the courier to trace or resend your order.

Also known as Banarasi Lal Mirch, this stuffed red chilli pickle is a traditional favorite from Bihar and Uttar Pradesh. Made with thick, fresh red chillies that are carefully hand-stuffed with roasted spice masala and sun-dried for 7-10 days.
This is not a rushed pickle. यह धैर्य से बनाया जाता है। Each chilli is slit, cleaned, stuffed one by one, then left under the sun to mature naturally. The chillies soften, absorb the masala, and transform into something deeply flavorful and addictive.

Step 1: Selecting Chillies — Only thick-skinned, fresh Banarasi red chillies are chosen. छोटी-पतली mirch नहीं चलेगी for stuffing!
Step 2: Cleaning & Deseeding — Each chilli is washed, tail removed, carefully slit, and seeds removed. Seeds are kept aside for later.
Step 3: Making the Masala — Roasted spices (mustard, cumin, fennel, nigella, fenugreek, coriander, amchur, black salt) are ground coarsely. The chilli seeds are roasted and mixed back in. यह secret है!
Step 4: Hand-Stuffing — Each chilli is stuffed carefully by hand, one at a time. Too much pressure breaks the chilli, too little affects maturation.
Step 5: Sun-Drying — Stuffed chillies are arranged on traditional bamboo trays and kept under the sun for 7-10 days. धूप में रखने से natural maturation होता है।
Step 6: Packing — Once perfectly matured, the pickle is packed in jars and ready for your table. पूरी process में patience और care है।
Medium-hot. तीखा है but not overwhelming. The heat builds slowly and feels rounded, not sharp. If you normally eat spicy food, you'll be fine. अगर बहुत mild preference hai, start with a small amount.
This is COMPLETELY NORMAL! Darkening happens due to mustard oil, spices, and sun-maturation. यह preservation का natural part है। It's not spoilage, it's aging beautifully.
Oil settling is natural! It acts as a preservative. Simply stir the pickle gently before serving. तेल pickle को safe रखता है।

Absolutely! After sun-drying, the chillies become soft and delicious. Many people eat them whole with meals. पूरी mirch खाओ, पूरा मज़ा लो।
Best before 9 months from packing date. Once opened, refrigerate and use within 2-3 months. लेकिन honestly, it finishes much faster!
DON'T! Moisture can spoil the pickle. हमेशा सूखा चम्मच use करो। If you forget once, the pickle might be fine, but make it a habit to use dry spoons only.
